Vinification: 

the grapes are harvested during the middle of September ,pressed. and the first pressing must is placed in steel tanks and clarified. Then it starts the fermentation with controlled temperature of 18°-20°C for 8-10 days. When the fermentation is finished the wine is cooled at 5 °C. One month after the harvest the wine is ready for second fermentation in pressure tanks (method charmat) in order to obtain a pressure of 4 bar and an alcoholic content of 12% vol. When the fermentation is finished the wine is kept in contact with the lees for 3 month . After the sterile filtration the wine is bottling.
